Gelatin has been soaked. Water temperature: 50C~60C (122F~140F). Dissolve the sugar. Cool to 27C. (80F).
Mold size: 23cm*23cm. Place fruit freely. Pour just enough jelly to lightly cover the bottom.
Harden in the refrigerator for about 10 minutes. Pour in all the remaining jelly. Jelly Temperature: 30C (86F). 2-3 hours in the refrigerator.
The vanilla sponge I'm making now is really fluffy. I made it without using many ingredients, but it was delicious.
Make meringue. Add the sugar in three parts. Pour it into the mold. 13-15 minutes at 165C. (330F).
